Glad you discovered the wiki! There's a plethora of info there. Additionally, if you look around the forums you'll find several great player created guides to help you starting out. If you haven't done so already, I suggest joining the Discord for prompt responses to questions (and potentially the same question already having been answered!).

As for what breed to start with? Choose what looks nice to you! Or what is more popular/rare. Crossbreeds are fun but can be trickier to start with. Checking out Town > Hall of Fame can help you see popularity of breeds.

Hi and welcome to the game!!! The game can be a little confusing at first but the wiki definitely helps you get around.

To answer your questions you can pick any breed you like its completely up to you. You don't even have to pick just one you could have as many as you want!!

Do your other question its a little complicated so stick with me but the bars show the breed value (BV). The best is dark green, then light green, then yellow, and lastly red. When buying horses you usually want horses with all green bars but other colors are fine too.
