How do people get breeds of horses like pinaloosas if they breed a pinto and an appaloosa. But when I breed some two horses I get crossbreeds. So do I get to name the crossbreed or what am I doing wrong?

The crossbreeds with names were part of successful campaigns to create a breed. You can read more about campaigns here https://horsefable.wiki/breed-campaigns/ any other crosses will just be generic crossbreeds and you do not get to name the breed, unless you run a successful campaign for that specific kind of crossbreed
