Not good at genetics but wanted to ask if she has a chance to produce appaloosas

she's only 1/4 Appaloosa, so all of her foals will be crossbreeds and not Appaloosas.

if you're talking about leopard genes, she only carries a pattern 2 (Patn2) gene which cannot be activated without leopard (Lp). so she can only produce leopard spotted horses if bred to a stallion that has Lp.

Leopard is Lp + Patn1. Lp + Patn2 will just give you Varnish Blanket. so you'd need a stallion with Lp and Patn 1, and hope it doesn't inherit the Patn2 (Lp + Patn1 + Patn2 = Blanket) 
So if you want a fully Leopard horse you're best off not using that one at all. if you're fine with Varnish blanket then just breed to a horse with Lp or LpLp and the foal has a chance of being Varnish Blanket
