Palomino- one breed or multiple?

I'm wanting to specialize in breeding Palomino and is currently just breeding Irish cobs for the coat and mane color. My question is should I just stick to Irish cobs or should be trying to breed the coat and mane color in all eligible breeds?
I always need cream carrying brumbies for my pearl ones so I'd be interested in studs or broods that are palomino. Bonus points if you have them levelled through showing or halter.
